Ingredients

  • Halloumi cheese - 250 grams
  • Olive oil - 2 tablespoons
  • Fresh oregano - 1 teaspoon, chopped
  • Fresh mint - 1 teaspoon, chopped
  • Lemon - 1, juiced
  • Black pepper - 1/2 teaspoon, freshly ground
  • Cherry tomatoes - 100 grams, halved

Steps

  1. Preheat the grill or grill pan over medium-high heat.
  2. Slice the halloumi cheese into 1 cm thick slices.
  3. In a bowl, mix the olive oil, chopped oregano, chopped mint, lemon juice, and black pepper.
  4. Brush the halloumi slices lightly with the olive oil mixture on both sides.
  5. Place the halloumi slices on the grill and cook for about 2-3 minutes on each side, or until golden brown and grill marks appear.
  6. While the halloumi is grilling, toss the halved cherry tomatoes with a pinch of salt and a drizzle of olive oil.
  7. Once the halloumi is grilled, remove it from the heat and serve immediately with the seasoned cherry tomatoes on the side.
