Ingredients

  • Chicken breast - 250 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Mixed salad greens - 100 grams
  • Cherry tomatoes - 100 grams
  • Cucumber - 1 medium, diced
  • Red onion - 1/4 medium, thinly sliced
  • Feta cheese - 50 grams, crumbled
  • Kalamata olives - 50 grams
  • Red wine vinegar - 1 tablespoon
  • Garlic - 1 clove, minced

Steps

  1. In a bowl, mix olive oil, lemon juice, dried oregano, salt, and black pepper to create a marinade.
  2. Add the chicken breast to the marinade, ensuring it is well coated. Let it marinate for at least 15 minutes.
  3. While the chicken is marinating, prepare the salad by combining mixed salad greens, cherry tomatoes, cucumber, red onion, feta cheese, and Kalamata olives in a large bowl.
  4. In a small bowl, whisk together red wine vinegar, minced garlic, and a pinch of salt and pepper to make the dressing.
  5. Preheat the grill to medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side or until fully cooked.
  6. Once the chicken is cooked, let it rest for a few minutes before slicing it into strips.
  7. Drizzle the salad with the dressing and toss gently. Top with the sliced grilled chicken.
  8. Serve immediately and enjoy your high-protein Greek salad!
