Grilled Artichokes

Grilled artichokes are a delicious and smoky Greek-inspired vegan dish that brings out the natural flavors of the artichoke while adding a zesty marinade. Perfect for a summer BBQ, these tender and flavorful artichokes are a delightful appetizer or side dish.

Ingredients

  • Artichokes - 2 whole
  • Olive oil - 4 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)
  • Vegan mayonnaise - 4 tablespoons (optional for dipping)

Steps

  1. Fill a large pot with water and bring it to a boil. Add a tablespoon of salt and the juice of one lemon to the water.
  2. Trim the tops and stem of the artichokes, then remove the tough outer leaves. Cut the artichokes in half lengthwise and remove the fuzzy choke with a spoon.
  3. Place the halved artichokes in the boiling water and cook for about 15-20 minutes, or until they are fork-tender.
  4. While the artichokes are boiling, prepare the marinade by mixing together the olive oil, lemon juice, minced garlic, oregano, salt, and black pepper in a small bowl.
  5. Once the artichokes are tender, drain them and let them cool slightly. Preheat your grill to medium-high heat.
  6. Brush the artichokes with the marinade, making sure to coat the insides and the outer leaves.
  7. Place the artichokes cut side down on the grill and cook for about 5-7 minutes, or until they develop nice grill marks. Flip them over and grill for an additional 5 minutes.
  8. Remove the artichokes from the grill and garnish with chopped fresh parsley. Serve with vegan mayonnaise for dipping, if desired.
