Ingredients
- Artichokes - 2 whole
- Olive oil - 4 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 3 cloves, minced
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
- Vegan mayonnaise - 4 tablespoons (optional for dipping)
Steps
- Fill a large pot with water and bring it to a boil. Add a tablespoon of salt and the juice of one lemon to the water.
- Trim the tops and stem of the artichokes, then remove the tough outer leaves. Cut the artichokes in half lengthwise and remove the fuzzy choke with a spoon.
- Place the halved artichokes in the boiling water and cook for about 15-20 minutes, or until they are fork-tender.
- While the artichokes are boiling, prepare the marinade by mixing together the olive oil, lemon juice, minced garlic, oregano, salt, and black pepper in a small bowl.
- Once the artichokes are tender, drain them and let them cool slightly. Preheat your grill to medium-high heat.
- Brush the artichokes with the marinade, making sure to coat the insides and the outer leaves.
- Place the artichokes cut side down on the grill and cook for about 5-7 minutes, or until they develop nice grill marks. Flip them over and grill for an additional 5 minutes.
- Remove the artichokes from the grill and garnish with chopped fresh parsley. Serve with vegan mayonnaise for dipping, if desired.
