- Greek yogurt - 200 grams
- Heavy cream - 100 ml
- Erythritol - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Gelatine powder - 1 teaspoon
- Water - 2 tablespoons
- Cocoa powder (optional for chocolate flavor) - 1 tablespoon
Steps
- In a small bowl, dissolve the gelatine powder in 2 tablespoons of warm water and let it sit for a few minutes until it blooms.
- In a mixing bowl, combine the Greek yogurt, erythritol, and vanilla extract. Mix well until smooth.
- In another bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the yogurt mixture until fully combined.
- If using, add cocoa powder and fold until incorporated.
- Microwave the bloomed gelatine for about 10-15 seconds until liquefied, then slowly add it to the yogurt mixture while stirring continuously.
- Divide the mousse into two serving dishes and refrigerate for at least 2 hours to set.
- Serve chilled, optionally garnished with berries or a sprinkle of cocoa powder.
