Ingredients

  • Greek yogurt - 200 grams
  • Heavy cream - 100 ml
  • Erythritol - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Gelatine powder - 1 teaspoon
  • Water - 2 tablespoons
  • Cocoa powder (optional for chocolate flavor) - 1 tablespoon

Steps

  1. In a small bowl, dissolve the gelatine powder in 2 tablespoons of warm water and let it sit for a few minutes until it blooms.
  2. In a mixing bowl, combine the Greek yogurt, erythritol, and vanilla extract. Mix well until smooth.
  3. In another bowl, whip the heavy cream until stiff peaks form.
  4. Gently fold the whipped cream into the yogurt mixture until fully combined.
  5. If using, add cocoa powder and fold until incorporated.
  6. Microwave the bloomed gelatine for about 10-15 seconds until liquefied, then slowly add it to the yogurt mixture while stirring continuously.
  7. Divide the mousse into two serving dishes and refrigerate for at least 2 hours to set.
  8. Serve chilled, optionally garnished with berries or a sprinkle of cocoa powder.
