Ingredients

  • Greek yogurt - 200 grams
  • Cream cheese - 100 grams
  • Honey - 3 tablespoons
  • Vanilla extract - 1 teaspoon
  • Egg - 1 large
  • Graham cracker crumbs - 50 grams
  • Unsalted butter - 30 grams, melted
  • Lemon juice - 1 tablespoon
  • Fresh berries - for topping (optional)

Steps

  1. Preheat the oven to 160°C (320°F).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter until well mixed.
  3. Press the crumb mixture into the bottom of a small 6-inch (15 cm) springform pan to create a crust.
  4. In another bowl, beat the cream cheese until smooth, then add Greek yogurt, honey, vanilla extract, lemon juice, and the egg. Mix until fully combined and smooth.
  5. Pour the cheesecake filling over the crust in the springform pan.
  6. Bake in the preheated oven for 25 minutes, or until the edges are set but the center is slightly jiggly.
  7. Turn off the oven and leave the cheesecake inside for an additional 10 minutes to cool slowly.
  8. Remove the cheesecake from the oven and let it cool to room temperature, then refrigerate for at least 2 hours before serving.
  9. Top with fresh berries before serving, if desired.
