  • Vegetable broth - 500 ml
  • Spinach - 100 grams, fresh
  • Oregano - 1 teaspoon, dried
  • Thyme - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Stir in the diced celery and carrot, cooking for another 5 minutes until slightly softened.
  4. Add the zucchini and bell pepper, cooking for an additional 3-4 minutes.
