Ingredients

  • Pork ribs - 800 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Oregano - 2 teaspoons, dried
  • Thyme - 1 teaspoon, dried
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Feta cheese - 50 grams, crumbled (for garnish)
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a mixing bowl, combine olive oil, lemon juice, minced garlic, oregano, thyme, paprika, salt, and pepper to create a marinade.
  2. Place the pork ribs in a large resealable plastic bag or shallow dish and pour the marinade over them, ensuring they are well-coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight for maximum flavor.
  3. Preheat your grill to medium-high heat.
  4. Remove the ribs from the marinade and allow excess marinade to drip off. Discard the remaining marinade.
  5. Place the ribs on the grill and cook for about 20-25 minutes on each side, or until the ribs are tender and have a nice char. Use a meat thermometer to ensure they reach an internal temperature of at least 70°C (160°F).
  6. Once cooked, remove the ribs from the grill and let them rest for 5 minutes.
  7. Serve the ribs garnished with crumbled feta cheese and chopped fresh parsley.
