- Pork ribs - 800 grams
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 4 cloves, minced
- Oregano - 2 teaspoons, dried
- Thyme - 1 teaspoon, dried
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Feta cheese - 50 grams, crumbled (for garnish)
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- In a mixing bowl, combine olive oil, lemon juice, minced garlic, oregano, thyme, paprika, salt, and pepper to create a marinade.
- Place the pork ribs in a large resealable plastic bag or shallow dish and pour the marinade over them, ensuring they are well-coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight for maximum flavor.
- Preheat your grill to medium-high heat.
- Remove the ribs from the marinade and allow excess marinade to drip off. Discard the remaining marinade.
- Place the ribs on the grill and cook for about 20-25 minutes on each side, or until the ribs are tender and have a nice char. Use a meat thermometer to ensure they reach an internal temperature of at least 70°C (160°F).
- Once cooked, remove the ribs from the grill and let them rest for 5 minutes.
- Serve the ribs garnished with crumbled feta cheese and chopped fresh parsley.
