Ingredients

  • Greek sausage (lamb or pork) - 200 grams
  • Olive oil - 2 tablespoons
  • Cherry tomatoes - 150 grams
  • Cucumber - 1 medium, diced
  • Bell pepper (any color) - 1, diced
  • Feta cheese - 100 grams, crumbled
  • Kalamata olives - 50 grams
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat a grill or grill pan over medium heat.
  2. In a bowl, toss the cherry tomatoes, cucumber, bell pepper, olive oil, lemon juice, salt, and black pepper until well combined.
  3. Grill the Greek sausages for about 8-10 minutes, turning occasionally, until cooked through and nicely browned.
  4. Once the sausages are cooked, remove them from the grill and let them rest for a couple of minutes before slicing them into bite-sized pieces.
