- Whole wheat wraps - 2 large
- Cucumber - 100 grams, diced
- Cherry tomatoes - 150 grams, halved
- Red onion - 50 grams, thinly sliced
- Bell pepper (any color) - 100 grams, diced
- Kalamata olives - 50 grams, pitted and halved
- Feta cheese - 75 grams, crumbled
- Fresh parsley - 15 grams, chopped
- Olive oil - 2 tablespoons
- Red wine vinegar - 1 tablespoon
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a large mixing bowl, combine the diced cucumber, halved cherry tomatoes, sliced red onion, diced bell pepper, and halved Kalamata olives.
- Add crumbled feta cheese and chopped parsley to the bowl.
- In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper to make the dressing.
- Pour the dressing over the salad mixture and toss gently to combine all the ingredients evenly.
- Lay each whole wheat wrap flat and spoon the Greek salad mixture onto the center of each wrap.
- Fold in the sides of the wrap and then roll tightly from the bottom to the top to create a wrap.
- Cut each wrap in half diagonally and serve immediately.
