Ingredients

  • Whole wheat wraps - 2 large
  • Cucumber - 100 grams, diced
  • Cherry tomatoes - 150 grams, halved
  • Red onion - 50 grams, thinly sliced
  • Bell pepper (any color) - 100 grams, diced
  • Kalamata olives - 50 grams, pitted and halved
  • Feta cheese - 75 grams, crumbled
  • Fresh parsley - 15 grams, chopped
  • Olive oil - 2 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large mixing bowl, combine the diced cucumber, halved cherry tomatoes, sliced red onion, diced bell pepper, and halved Kalamata olives.
  2. Add crumbled feta cheese and chopped parsley to the bowl.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper to make the dressing.
  4. Pour the dressing over the salad mixture and toss gently to combine all the ingredients evenly.
  5. Lay each whole wheat wrap flat and spoon the Greek salad mixture onto the center of each wrap.
  6. Fold in the sides of the wrap and then roll tightly from the bottom to the top to create a wrap.
  7. Cut each wrap in half diagonally and serve immediately.
