- Whole wheat flatbread - 2 pieces
- Olive oil - 2 tablespoons
- Cherry tomatoes - 200 grams, halved
- Cucumber - 100 grams, diced
- Red onion - 50 grams, thinly sliced
- Kalamata olives - 50 grams, pitted and halved
- Feta cheese - 100 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Dried oregano - 1 teaspoon
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat your oven to 200°C (400°F).
- Place the whole wheat flatbreads on a baking sheet and brush each with 1 tablespoon of olive oil.
- Bake the flatbreads in the preheated oven for about 5-7 minutes, or until they are lightly golden and crispy.
- While the flatbreads are baking, prepare the salad by combining the cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and parsley in a large bowl.
- Drizzle the lemon juice and remaining 1 tablespoon of olive oil over the salad mixture, then sprinkle with dried oregano, salt, and black pepper. Toss gently to combine.
- Once the flatbreads are done baking, remove them from the oven and top each with the Greek salad mixture evenly.
- Serve immediately, garnished with additional parsley if desired.
