Ingredients

  • Whole wheat flatbread - 2 pieces
  • Olive oil - 2 tablespoons
  • Cherry tomatoes - 200 grams, halved
  • Cucumber - 100 grams, diced
  • Red onion - 50 grams, thinly sliced
  • Kalamata olives - 50 grams, pitted and halved
  • Feta cheese - 100 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Dried oregano - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Place the whole wheat flatbreads on a baking sheet and brush each with 1 tablespoon of olive oil.
  3. Bake the flatbreads in the preheated oven for about 5-7 minutes, or until they are lightly golden and crispy.
  4. While the flatbreads are baking, prepare the salad by combining the cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and parsley in a large bowl.
  5. Drizzle the lemon juice and remaining 1 tablespoon of olive oil over the salad mixture, then sprinkle with dried oregano, salt, and black pepper. Toss gently to combine.
  6. Once the flatbreads are done baking, remove them from the oven and top each with the Greek salad mixture evenly.
