Ingredients
- canned chickpeas - 240 grams, drained and rinsed
- fresh parsley - 30 grams, chopped
- garlic - 1 clove, minced
- red onion - 50 grams, finely chopped
- feta cheese - 50 grams, crumbled
- breadcrumbs - 50 grams
- egg - 1 large
- olive oil - 2 tablespoons
- lemon juice - 1 tablespoon
- dried oregano - 1 teaspoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- whole wheat buns - 2
- cucumber - 1 small, sliced
- tomato - 1 medium, sliced
- kalamata olives - 50 grams, pitted and sliced
- mixed greens - 50 grams
Steps
- In a mixing bowl, mash the drained chickpeas with a fork until slightly chunky.
- Add chopped parsley, minced garlic, finely chopped red onion, crumbled feta cheese, breadcrumbs, egg, lemon juice, dried oregano, salt, and black pepper to the mashed chickpeas. Mix until well combined.
- Form the mixture into two patties.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, prepare the toppings by slicing the cucumber, tomato, and kalamata olives.
- Toast the whole wheat buns in the skillet for about 1-2 minutes until lightly crispy.
- Assemble the burgers by placing a chickpea patty on each bun, followed by mixed greens, cucumber slices, tomato slices, and kalamata olives.
- Drizzle with the remaining olive oil and serve immediately.
