Ingredients

  • canned chickpeas - 240 grams, drained and rinsed
  • fresh parsley - 30 grams, chopped
  • garlic - 1 clove, minced
  • red onion - 50 grams, finely chopped
  • feta cheese - 50 grams, crumbled
  • breadcrumbs - 50 grams
  • egg - 1 large
  • olive oil - 2 tablespoons
  • lemon juice - 1 tablespoon
  • dried oregano - 1 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • whole wheat buns - 2
  • cucumber - 1 small, sliced
  • tomato - 1 medium, sliced
  • kalamata olives - 50 grams, pitted and sliced
  • mixed greens - 50 grams

Steps

  1. In a mixing bowl, mash the drained chickpeas with a fork until slightly chunky.
  2. Add chopped parsley, minced garlic, finely chopped red onion, crumbled feta cheese, breadcrumbs, egg, lemon juice, dried oregano, salt, and black pepper to the mashed chickpeas. Mix until well combined.
  3. Form the mixture into two patties.
  4. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
  5. While the patties are cooking, prepare the toppings by slicing the cucumber, tomato, and kalamata olives.
  6. Toast the whole wheat buns in the skillet for about 1-2 minutes until lightly crispy.
  7. Assemble the burgers by placing a chickpea patty on each bun, followed by mixed greens, cucumber slices, tomato slices, and kalamata olives.
  8. Drizzle with the remaining olive oil and serve immediately.
