Ingredients

  • Red bell pepper - 2 large
  • Green bell pepper - 1 large
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Oregano - 1 teaspoon, dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 50 grams, crumbled (optional)
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash the bell peppers, cut them in half lengthwise, and remove the seeds and stems.
  3. In a mixing bowl, combine olive oil, minced garlic, dried oregano, salt, and black pepper.
  4. Brush the olive oil mixture generously over the inside of the bell pepper halves.
  5. Place the seasoned bell peppers cut side up on a baking sheet lined with parchment paper.
  6. Roast in the preheated oven for about 20-25 minutes, or until the peppers are tender and slightly charred.
  7. Remove from the oven and sprinkle with crumbled feta cheese, if using.
  8. Garnish with fresh parsley before serving.
