- Red bell pepper - 2 large
- Green bell pepper - 1 large
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Oregano - 1 teaspoon, dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Feta cheese - 50 grams, crumbled (optional)
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat your oven to 200°C (400°F).
- Wash the bell peppers, cut them in half lengthwise, and remove the seeds and stems.
- In a mixing bowl, combine olive oil, minced garlic, dried oregano, salt, and black pepper.
- Brush the olive oil mixture generously over the inside of the bell pepper halves.
- Place the seasoned bell peppers cut side up on a baking sheet lined with parchment paper.
- Roast in the preheated oven for about 20-25 minutes, or until the peppers are tender and slightly charred.
- Remove from the oven and sprinkle with crumbled feta cheese, if using.
- Garnish with fresh parsley before serving.
