Ingredients

  • quinoa - 100 grams
  • water - 250 ml
  • olive oil - 2 tablespoons
  • red onion - 50 grams, finely chopped
  • garlic - 2 cloves, minced
  • bell pepper - 50 grams, finely chopped
  • fresh parsley - 30 grams, chopped
  • feta cheese - 50 grams, crumbled
  • dried oregano - 1 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • whole wheat breadcrumbs - 50 grams
  • egg - 1 large
  • lemon juice - 1 tablespoon

Steps

  1. Rinse the quinoa under cold water and then combine it with 250 ml of water in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the water is absorbed and the quinoa is fluffy. Remove from heat and let it cool.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped red onion and bell pepper, and sauté for about 5 minutes until they are softened. Add the minced garlic and cook for an additional minute. Remove from heat and let it cool.
  3. In a large bowl, combine the cooked quinoa, sautéed vegetables, chopped parsley, crumbled feta cheese, dried oregano, salt, black pepper, breadcrumbs, egg, and lemon juice. Mix well until the ingredients are combined and form a cohesive mixture.
  4. Shape the mixture into two patties. If the mixture is too wet, add a little more breadcrumbs until it holds together.
  5. Heat the remaining tablespoon of olive oil in the skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
  6. Serve the quinoa burgers on whole grain buns or lettuce wraps with your choice of toppings such as cucumber slices, tomato, and tzatziki sauce.
