Ingredients

  • Pasta (fusilli or penne) - 100 grams
  • Cucumber - 1 medium, diced
  • Cherry tomatoes - 150 grams, halved
  • Kalamata olives - 50 grams, pitted and sliced
  • Red onion - 1/4 medium, finely chopped
  • Feta cheese - 50 grams, crumbled
  • Olive oil - 2 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine the diced cucumber, halved cherry tomatoes, sliced Kalamata olives, and chopped red onion.
