Ingredients

  • Ground lamb - 250 grams
  • Ground beef - 250 grams
  • Garlic - 2 cloves, minced
  • Red onion - 1 small, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 1 tablespoon, chopped
  • Oregano - 1 teaspoon, dried
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Cauliflower - 1 medium head, grated
  • Lemon - 1, juiced
  • Feta cheese - 50 grams, crumbled
  • Greek yogurt - 100 grams, for serving

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine the ground lamb, ground beef, minced garlic, chopped red onion, parsley, mint, oregano, salt, black pepper, and egg. Mix until well combined.
  3. Form the mixture into small meatballs, about 2.5 cm in diameter, and place them on a baking sheet lined with parchment paper.
  4. Drizzle the meatballs with olive oil and bake in the preheated oven for 20 minutes, or until browned and cooked through.
  5. While the meatballs are baking, prepare the cauliflower rice by grating the cauliflower into rice-sized pieces.
  6. In a large skillet over medium heat, add a tablespoon of olive oil. Add the grated cauliflower and sauté for about 5-7 minutes, stirring occasionally, until tender.
  7. Season the cauliflower rice with salt, pepper, and lemon juice to taste.
  8. Once the meatballs are done, serve them over the cauliflower rice, topped with crumbled feta cheese and a dollop of Greek yogurt.
