Ingredients

  • Pork tenderloin - 300 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - ½ teaspoon
  • Black pepper - ¼ teaspoon
  • Bell pepper - 1 medium, cut into chunks
  • Red onion - 1 medium, cut into chunks
  • Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)

Steps

  1. Cut the pork tenderloin into 2.5 cm cubes and place them in a mixing bowl.
  2. In a separate bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, paprika, salt, and black pepper to create the marinade.
  3. Pour the marinade over the pork cubes and stir to coat evenly. Cover and let marinate in the refrigerator for at least 15 minutes.
  4. While the pork is marinating, prepare the vegetables by cutting the bell pepper and red onion into chunks.
  5. Preheat the grill or grill pan over medium-high heat.
  6. Once marinated, thread the pork cubes, bell pepper, and red onion onto the skewers, alternating between meat and vegetables.
  7. Grill the skewers for about 10-12 minutes, turning occasionally, until the pork is cooked through and has nice grill marks.
  8. Remove from the grill and let rest for a few minutes before serving.
