Ingredients
- Pork tenderloin - 300 grams
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Garlic - 2 cloves, minced
- Dried oregano - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - ½ teaspoon
- Black pepper - ¼ teaspoon
- Bell pepper - 1 medium, cut into chunks
- Red onion - 1 medium, cut into chunks
- Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)
Steps
- Cut the pork tenderloin into 2.5 cm cubes and place them in a mixing bowl.
- In a separate bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, paprika, salt, and black pepper to create the marinade.
- Pour the marinade over the pork cubes and stir to coat evenly. Cover and let marinate in the refrigerator for at least 15 minutes.
- While the pork is marinating, prepare the vegetables by cutting the bell pepper and red onion into chunks.
- Preheat the grill or grill pan over medium-high heat.
- Once marinated, thread the pork cubes, bell pepper, and red onion onto the skewers, alternating between meat and vegetables.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the pork is cooked through and has nice grill marks.
- Remove from the grill and let rest for a few minutes before serving.
