- Cauliflower - 300 grams
- Ground lamb or beef - 250 grams
- Feta cheese - 100 grams, crumbled
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Egg - 1, beaten
- Oregano - 1 teaspoon, dried
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 200°C (390°F).
- Steam the cauliflower florets until tender, about 10 minutes, then let cool slightly.
- Using a clean kitchen towel, squeeze excess moisture from the cauliflower and pulse in a food processor until it resembles rice.
- In a bowl, combine the cauliflower, half of the beaten egg, salt, and pepper. Mix well to form the crust.
- Press the cauliflower mixture into the bottom and sides of a greased 20 cm (8-inch) pie dish, creating an even layer. Bake for 15 minutes until slightly golden.
- Meanwhile, heat olive oil in a skillet over medium heat. Add the chopped onion and garlic, sautéing until translucent.
- Add the ground lamb or beef to the skillet, breaking it up with a spoon. Cook until browned, about 8-10 minutes.
- Stir in the oregano, paprika, and season with salt and pepper. Remove from heat and let cool slightly.
- Mix in the crumbled feta cheese and chopped parsley into the meat mixture.
- Pour the meat filling into the pre-baked cauliflower crust, spreading it evenly.
- Brush the remaining beaten egg over the filling for a nice glaze.
- Return the pie to the oven and bake for an additional 20 minutes until the filling is cooked through and the top is golden.
- Allow to cool for a few minutes before slicing and serving.
