Steps
- Begin by ricing the cauliflower using a food processor or a box grater until it resembles grains of rice.
- In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the riced cauliflower to the saucepan and stir to coat it with the olive oil and garlic.
- Pour in the vegetable broth, lemon juice, and lemon zest. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 10-12 minutes, or until the cauliflower is tender and has absorbed most of the liquid.
- Remove from heat, fluff the cauliflower rice with a fork, and stir in the chopped parsley. Season with salt and black pepper to taste.
