Ingredients

  • Yellow split peas - 150 grams
  • Water - 500 ml
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the yellow split peas under cold water until the water runs clear, then drain.
  2. In a medium pot, combine the rinsed split peas and water. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for about 25-30 minutes, or until the peas are soft and tender.
  4. In a separate skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  5. Add the minced garlic and sauté for an additional 2 minutes, stirring to prevent burning.
  6. Once the split peas are cooked, drain any excess water and add them to the skillet with the onion and garlic.
  7. Stir in the lemon juice, salt, black pepper, and paprika. Mash the mixture with a fork or potato masher until you reach a creamy consistency.
  8. Drizzle the remaining tablespoon of olive oil over the top and mix well.
  9. Serve warm or at room temperature, garnished with chopped parsley.
