Ingredients

  • Chicken breast - 300 grams, cubed
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Zucchini - 2 medium, spiralized
  • Cherry tomatoes - 100 grams, halved
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper to create a marinade.
  2. Add the cubed chicken breast to the marinade and toss to coat well. Cover and refrigerate for at least 15 minutes.
  3. While the chicken is marinating, spiralize the zucchini to create noodles and set aside.
  4. Preheat a grill or grill pan over medium-high heat. Thread the marinated chicken onto skewers.
  5. Grill the chicken skewers for about 10-12 minutes, turning occasionally, until fully cooked and slightly charred.
  6. In the last 2-3 minutes of grilling, add cherry tomato halves to the grill to roast slightly.
  7. In a large skillet, lightly sauté the spiralized zucchini over medium heat for 2-3 minutes until just tender.
  8. Divide the zucchini noodles between two plates, top with grilled chicken skewers and roasted cherry tomatoes.
  9. Sprinkle with crumbled feta cheese and chopped parsley before serving.
