- Chicken breast - 300 grams, cubed

- Dried oregano - 1 teaspoon

- Black pepper - 1/4 teaspoon
- Zucchini - 2 medium, spiralized
- Cherry tomatoes - 100 grams, halved
- Feta cheese - 50 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper to create a marinade.
- Add the cubed chicken breast to the marinade and toss to coat well. Cover and refrigerate for at least 15 minutes.
- While the chicken is marinating, spiralize the zucchini to create noodles and set aside.
- Preheat a grill or grill pan over medium-high heat. Thread the marinated chicken onto skewers.
- Grill the chicken skewers for about 10-12 minutes, turning occasionally, until fully cooked and slightly charred.
- In the last 2-3 minutes of grilling, add cherry tomato halves to the grill to roast slightly.
- In a large skillet, lightly sauté the spiralized zucchini over medium heat for 2-3 minutes until just tender.
- Divide the zucchini noodles between two plates, top with grilled chicken skewers and roasted cherry tomatoes.
- Sprinkle with crumbled feta cheese and chopped parsley before serving.
