Ingredients

  • Zucchini - 2 medium-sized

  • Cherry tomatoes - 200 grams, halved
  • Feta cheese - 100 grams, crumbled
  • Kalamata olives - 50 grams, pitted and halved
  • Fresh basil - 1/4 cup, chopped
  • Oregano - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Spiralize the zucchini using a spiralizer to create zucchini noodles (zoodles) and set aside.
  2. In a large skillet, heat the olive oil over medium heat and add the minced garlic, sautéing for about 1 minute until fragrant.
  3. Add the halved cherry tomatoes to the skillet and cook for about 3-4 minutes until they start to soften.
  4. Stir in the zucchini noodles and cook for 2-3 minutes, tossing gently to combine.
  5. Add the crumbled feta cheese, Kalamata olives, chopped basil, dried oregano, salt, and black pepper to the skillet, and toss until everything is well combined and heated through.
