Ingredients

  • Active dry yeast - 1 teaspoon
  • Honey - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Zaatar spice blend - 2 tablespoons
  • Feta cheese - 100g, crumbled
  • Cherry tomatoes - 100g, halved
  • Olives - 50g, pitted and sliced
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a small bowl, combine warm water, honey, and active dry yeast. Let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine gluten-free pizza flour and salt. Add the yeast mixture and olive oil, then mix until a dough forms.
  3. Knead the dough on a lightly floured surface for about 5 minutes until smooth. Place the dough in an oiled bowl, cover with a cloth, and let it rise in a warm place for 20 minutes.
  4. Preheat the oven to 220°C (428°F). Line a baking sheet with parchment paper.
