  • Feta cheese - 100 grams, crumbled
  • Ricotta cheese - 100 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Egg - 1 large
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Nutmeg - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Parmesan cheese - 30 grams, grated (optional, for topping)

Steps

  1. Cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for an additional 1 minute until fragrant.
  4. Stir in the fresh spinach and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
  5. In a mixing bowl, combine the cooked spinach mixture with crumbled feta, ricotta, egg, salt, black pepper, nutmeg, and lemon juice. Mix until well combined.
  6. Preheat the oven to 180°C (350°F).
  7. In a baking dish, layer half of the cooked pasta at the bottom. Spread the spinach mixture evenly over the pasta, then top with the remaining pasta.
