- Gluten-free pasta - 200 grams
- Fresh spinach - 200 grams
- Feta cheese - 100 grams, crumbled
- Ricotta cheese - 100 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Egg - 1 large
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Nutmeg - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Parmesan cheese - 30 grams, grated (optional, for topping)
Steps
- Cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Stir in the fresh spinach and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
- In a mixing bowl, combine the cooked spinach mixture with crumbled feta, ricotta, egg, salt, black pepper, nutmeg, and lemon juice. Mix until well combined.
- Preheat the oven to 180°C (350°F).
- In a baking dish, layer half of the cooked pasta at the bottom. Spread the spinach mixture evenly over the pasta, then top with the remaining pasta.
- Sprinkle grated Parmesan cheese on top if desired.
- Bake in the preheated oven for 20 minutes until heated through and slightly golden on top.
- Allow to cool for a few minutes before serving.
