- Gluten-free pizza base - 1 medium (approximately 200g)
- Prawns (peeled and deveined) - 250g
- Olive oil - 2 tablespoons
- Garlic (minced) - 2 cloves
- Cherry tomatoes (halved) - 200g
- Feta cheese (crumbled) - 100g
- Fresh parsley (chopped) - 2 tablespoons
- Oregano (dried) - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (390°F).
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the halved cherry tomatoes to the skillet. Cook for about 5 minutes until they start to soften.
- Stir in the prawns, oregano, salt, and black pepper. Cook for an additional 5-7 minutes until the prawns turn pink and are cooked through.
- Remove the skillet from heat and stir in the lemon juice and chopped parsley.
- Place the gluten-free pizza base on a baking tray and spread the prawn and tomato mixture evenly over the top.
- Sprinkle the crumbled feta cheese over the prawn mixture.
- Bake in the preheated oven for 10-12 minutes until the edges of the pizza base are golden and the feta is slightly melted.
- Remove from the oven, let it cool slightly, and garnish with additional fresh parsley if desired.
- Slice and serve hot.
