Ingredients

  • Gluten-free pizza base - 1 medium (approximately 200g)
  • Prawns (peeled and deveined) - 250g
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Cherry tomatoes (halved) - 200g
  • Feta cheese (crumbled) - 100g
  • Fresh parsley (chopped) - 2 tablespoons
  • Oregano (dried) - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (390°F).
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Add the halved cherry tomatoes to the skillet. Cook for about 5 minutes until they start to soften.
  4. Stir in the prawns, oregano, salt, and black pepper. Cook for an additional 5-7 minutes until the prawns turn pink and are cooked through.
  5. Remove the skillet from heat and stir in the lemon juice and chopped parsley.
  6. Place the gluten-free pizza base on a baking tray and spread the prawn and tomato mixture evenly over the top.
  7. Sprinkle the crumbled feta cheese over the prawn mixture.
  8. Bake in the preheated oven for 10-12 minutes until the edges of the pizza base are golden and the feta is slightly melted.
  9. Remove from the oven, let it cool slightly, and garnish with additional fresh parsley if desired.
  10. Slice and serve hot.
