  • Kalamata olives - 50 grams, pitted and sliced
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the gluten-free orzo pasta according to package instructions, usually around 8-10 minutes. Drain and rinse under cold water to stop the cooking process.
  2. In a large bowl, combine the cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and fresh parsley.
