Ingredients

  • Gluten-Free Pizza Base - 1 large (12-inch)
  • Ground Lamb or Beef - 200 grams
  • Eggplant - 1 small, sliced
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Tomato Paste - 2 tablespoons
  • Cinnamon - 1/2 teaspoon
  • Nutmeg - 1/4 teaspoon
  • Salt - 1 teaspoon
  • Black Pepper - 1/2 teaspoon
  • Olive Oil - 2 tablespoons
  • Feta Cheese - 100 grams, crumbled
  • Mozzarella Cheese - 100 grams, shredded
  • Egg - 1 large
  • Milk - 100 ml
  • Gluten-Free Flour - 2 tablespoons

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add diced onion and minced garlic; sauté until softened.
  3. Add ground lamb or beef to the skillet. Cook until browned, about 5-7 minutes.
  4. Stir in tomato paste, cinnamon, nutmeg, salt, and black pepper. Cook for another 2-3 minutes. Set aside.
  5. In the same skillet, add the remaining olive oil and fry the eggplant slices until golden brown on both sides. Remove and drain on paper towels.
  6. In a small saucepan, whisk together the egg, milk, and gluten-free flour over low heat until thickened, about 3-4 minutes. Remove from heat and set aside.
  7. Spread the cooked meat mixture evenly over the gluten-free pizza base.
  8. Layer the fried eggplant slices on top of the meat mixture.
  9. Pour the béchamel sauce over the eggplant, spreading it evenly. Sprinkle crumbled feta and shredded mozzarella cheese on top.
  10. Bake the pizza in the preheated oven for 15-20 minutes, or until the cheese is bubbly and golden.
  11. Remove from the oven, let cool for a few minutes, slice, and serve.
