- Gluten-Free Pizza Base - 1 large (12-inch)
- Ground Lamb or Beef - 200 grams
- Eggplant - 1 small, sliced
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Tomato Paste - 2 tablespoons
- Cinnamon - 1/2 teaspoon
- Nutmeg - 1/4 teaspoon
- Salt - 1 teaspoon
- Black Pepper - 1/2 teaspoon
- Olive Oil - 2 tablespoons
- Feta Cheese - 100 grams, crumbled
- Mozzarella Cheese - 100 grams, shredded
- Egg - 1 large
- Milk - 100 ml
- Gluten-Free Flour - 2 tablespoons
Steps
- Preheat the oven to 220°C (428°F).
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add diced onion and minced garlic; sauté until softened.
- Add ground lamb or beef to the skillet. Cook until browned, about 5-7 minutes.
- Stir in tomato paste, cinnamon, nutmeg, salt, and black pepper. Cook for another 2-3 minutes. Set aside.
- In the same skillet, add the remaining olive oil and fry the eggplant slices until golden brown on both sides. Remove and drain on paper towels.
- In a small saucepan, whisk together the egg, milk, and gluten-free flour over low heat until thickened, about 3-4 minutes. Remove from heat and set aside.
- Spread the cooked meat mixture evenly over the gluten-free pizza base.
- Layer the fried eggplant slices on top of the meat mixture.
- Pour the béchamel sauce over the eggplant, spreading it evenly. Sprinkle crumbled feta and shredded mozzarella cheese on top.
- Bake the pizza in the preheated oven for 15-20 minutes, or until the cheese is bubbly and golden.
- Remove from the oven, let cool for a few minutes, slice, and serve.
