  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 50g, crumbled (optional)
  • Cherry tomatoes - 100g, halved (for topping)
  • Olives - 50g, pitted and sliced (for topping)

Steps

  1. Preheat your oven to 220°C (425°F).
  2. Cut the eggplant in half lengthwise, sprinkle with salt, and let it sit for about 15 minutes to draw out moisture.
  3. Rinse the eggplant halves and pat them dry with a paper towel. Brush them with 1 tablespoon of olive oil.
  4. Place the eggplant on a baking sheet, cut side down, and roast in the oven for about 20-25 minutes until soft and slightly charred.
  5. Once the eggplant is done, let it cool slightly, then scoop the flesh into a mixing bowl.
  6. Add minced garlic, lemon juice, tahini, remaining olive oil, salt, black pepper, and chopped parsley to the bowl with the eggplant. Mash everything together until well combined but still slightly chunky.
  7. Spread the melitzanosalata mixture evenly over the gluten-free pizza crust.
  8. Top the pizza with halved cherry tomatoes, sliced olives, and crumbled feta cheese, if using.
