- Gluten-free pizza flour - 200 grams
- Warm water - 150 ml
- Olive oil - 2 tablespoons
- Active dry yeast - 1 teaspoon
- Honey - 1 teaspoon
- Salt - 1/2 teaspoon
- Tomato sauce - 100 grams
- Fresh mozzarella cheese - 100 grams, sliced
- Feta cheese - 50 grams, crumbled
- Fresh basil leaves - 10 leaves
- Cherry tomatoes - 100 grams, halved
- Black pepper - to taste
Steps
- In a small bowl, combine warm water, honey, and active dry yeast. Let it sit for about 5 minutes until it becomes frothy.
- In a large mixing bowl, combine gluten-free pizza flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.
- Knead the dough in the bowl for about 2-3 minutes until it’s smooth and slightly sticky. If too sticky, add a little more flour.
- Cover the bowl with a damp cloth and let the dough rise in a warm place for about 15 minutes.
- Preheat your oven to 220°C (428°F).
- On a floured surface, roll out the dough into a round shape about 10 inches in diameter, then transfer it to a baking sheet lined with parchment paper.
- Spread the tomato sauce evenly over the dough, leaving a small border for the crust.
- Layer the fresh mozzarella slices evenly across the sauce, then sprinkle the crumbled feta and halved cherry tomatoes on top.
- Bake in the preheated oven for about 12-15 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.
- Remove from the oven and top with fresh basil leaves and a sprinkle of black pepper before slicing and serving.
