Ingredients

  • Gluten-free pizza flour - 200 grams
  • Warm water - 150 ml
  • Olive oil - 2 tablespoons
  • Active dry yeast - 1 teaspoon
  • Honey - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Tomato sauce - 100 grams
  • Fresh mozzarella cheese - 100 grams, sliced
  • Feta cheese - 50 grams, crumbled
  • Fresh basil leaves - 10 leaves
  • Cherry tomatoes - 100 grams, halved
  • Black pepper - to taste

Steps

  1. In a small bowl, combine warm water, honey, and active dry yeast. Let it sit for about 5 minutes until it becomes frothy.
  2. In a large mixing bowl, combine gluten-free pizza flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.
  3. Knead the dough in the bowl for about 2-3 minutes until it’s smooth and slightly sticky. If too sticky, add a little more flour.
  4. Cover the bowl with a damp cloth and let the dough rise in a warm place for about 15 minutes.
  5. Preheat your oven to 220°C (428°F).
  6. On a floured surface, roll out the dough into a round shape about 10 inches in diameter, then transfer it to a baking sheet lined with parchment paper.
  7. Spread the tomato sauce evenly over the dough, leaving a small border for the crust.
  8. Layer the fresh mozzarella slices evenly across the sauce, then sprinkle the crumbled feta and halved cherry tomatoes on top.
  9. Bake in the preheated oven for about 12-15 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.
  10. Remove from the oven and top with fresh basil leaves and a sprinkle of black pepper before slicing and serving.
