Ingredients
- Gluten-free pasta - 200 grams
- Lamb shoulder, diced - 300 grams
- Olive oil - 2 tablespoons
- Onion, chopped - 1 medium
- Garlic, minced - 3 cloves
- Carrot, diced - 1 medium
- Tomatoes, canned, crushed - 400 grams
- Red wine - 100 ml
- Dried oregano - 1 teaspoon
- Dried thyme - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Feta cheese, crumbled - 50 grams
- Fresh parsley, chopped - for garnish
Steps
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced carrot, stirring for another 2-3 minutes until fragrant.
- Increase the heat to medium-high, add the diced lamb, and cook until browned on all sides, about 5-7 minutes.
- Pour in the red wine and let it simmer for 2-3 minutes, scraping any browned bits from the bottom of the pot.
- Add the crushed tomatoes, dried oregano, dried thyme, salt, and black pepper. Stir to combine, then bring the mixture to a boil.
- Reduce the heat to low, cover, and let it simmer for 45 minutes, or until the lamb is tender and the sauce is thickened.
- While the lamb is cooking, prepare the gluten-free pasta according to package instructions. Drain and set aside.
- Once the lamb is cooked, stir in the cooked pasta and mix until well combined.
- Serve hot, topped with crumbled feta cheese and garnished with fresh parsley.
