Ingredients

  • Gluten-free pasta - 200 grams
  • Lamb shoulder, diced - 300 grams
  • Olive oil - 2 tablespoons
  • Onion, chopped - 1 medium
  • Garlic, minced - 3 cloves
  • Carrot, diced - 1 medium
  • Tomatoes, canned, crushed - 400 grams
  • Red wine - 100 ml
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Feta cheese, crumbled - 50 grams
  • Fresh parsley, chopped - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and diced carrot, stirring for another 2-3 minutes until fragrant.
  3. Increase the heat to medium-high, add the diced lamb, and cook until browned on all sides, about 5-7 minutes.
  4. Pour in the red wine and let it simmer for 2-3 minutes, scraping any browned bits from the bottom of the pot.
  5. Add the crushed tomatoes, dried oregano, dried thyme, salt, and black pepper. Stir to combine, then bring the mixture to a boil.
  6. Reduce the heat to low, cover, and let it simmer for 45 minutes, or until the lamb is tender and the sauce is thickened.
  7. While the lamb is cooking, prepare the gluten-free pasta according to package instructions. Drain and set aside.
  8. Once the lamb is cooked, stir in the cooked pasta and mix until well combined.
  9. Serve hot, topped with crumbled feta cheese and garnished with fresh parsley.
