- Gluten-free pasta - 200 grams
- Olive oil - 2 tablespoons
- Red onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Zucchini - 1 medium, diced
- Tomatoes - 2 medium, diced
- Fresh parsley - 2 tablespoons, chopped
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Feta cheese - 100 grams, crumbled (optional)
- Lemon juice - 1 tablespoon
Steps
- Bring a large pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced red onion and sauté until it becomes translucent, about 3-4 minutes.
- Add the minced garlic, red bell pepper, and zucchini to the skillet. Cook for another 5 minutes until the vegetables are softened.
- Stir in the diced tomatoes, fresh parsley, dried oregano, salt, and black pepper. Cook for another 5-7 minutes until the tomatoes are heated through and the mixture is well combined.
- Combine the cooked pasta with the vegetable mixture in the skillet, tossing gently to combine. If desired, add crumbled feta cheese and lemon juice, mixing until evenly distributed.
- Remove from heat and serve hot, garnished with additional parsley and feta cheese if desired.
