Ingredients

  • Gluten-free pasta - 200 grams
  • Olive oil - 2 tablespoons
  • Red onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Zucchini - 1 medium, diced
  • Tomatoes - 2 medium, diced
  • Fresh parsley - 2 tablespoons, chopped
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 100 grams, crumbled (optional)
  • Lemon juice - 1 tablespoon

Steps

  1. Bring a large pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced red onion and sauté until it becomes translucent, about 3-4 minutes.
  3. Add the minced garlic, red bell pepper, and zucchini to the skillet. Cook for another 5 minutes until the vegetables are softened.
  4. Stir in the diced tomatoes, fresh parsley, dried oregano, salt, and black pepper. Cook for another 5-7 minutes until the tomatoes are heated through and the mixture is well combined.
  5. Combine the cooked pasta with the vegetable mixture in the skillet, tossing gently to combine. If desired, add crumbled feta cheese and lemon juice, mixing until evenly distributed.
  6. Remove from heat and serve hot, garnished with additional parsley and feta cheese if desired.
