Ingredients

  • Gluten-free pizza crust - 1 large (about 30 cm)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 150 grams, halved
  • Feta cheese - 100 grams, crumbled
  • Kalamata olives - 75 grams, pitted and sliced
  • Fresh oregano - 1 tablespoon, chopped
  • Mozzarella cheese - 100 grams, shredded
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your oven to 220°C (425°F).
  2. In a small skillet, heat 1 tablespoon of olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  3. Add the halved cherry tomatoes to the skillet and cook for an additional 2-3 minutes until they start to soften. Season with salt and pepper to taste.
  4. Place the gluten-free pizza crust on a baking sheet or pizza stone.
  5. Spread the sautéed tomatoes and garlic evenly over the pizza crust.
  6. Sprinkle the crumbled feta cheese, sliced Kalamata olives, and chopped fresh oregano over the top.
  7. Add the shredded mozzarella cheese evenly on top of the other ingredients.
  8. Drizzle the remaining tablespoon of olive oil over the pizza.
  9. Bake in the preheated oven for 12-15 minutes, or until the cheese is bubbly and the crust is golden brown.
  10. Remove from the oven, let it cool for a minute, slice, and serve warm.
