- Cherry tomatoes - 150 grams, halved
- Spinach - 100 grams, fresh

- Feta cheese - 50 grams, crumbled
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a bowl, combine fava bean flour and water, mixing until a smooth dough forms. Let it rest for 10 minutes.
- Roll out the dough on a floured surface to a thickness of 2-3 mm, then cut into desired pasta shapes (e.g., fettuccine or tagliatelle).
- Bring a pot of salted water to a boil and cook the fava bean pasta for 3-4 minutes until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Add halved cherry tomatoes to the skillet and cook for about 3-4 minutes until softened.
- Stir in the fresh spinach and cook until wilted, about 2 minutes.
- Add the cooked fava bean pasta to the skillet, along with lemon juice, zest, salt, and black pepper. Toss everything together to combine.
- Remove from heat and sprinkle with crumbled feta cheese and chopped parsley before serving.
