  • Water - 70 ml
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 150 grams, halved
  • Spinach - 100 grams, fresh
  • Lemon - 1, juiced and zested
  • Feta cheese - 50 grams, crumbled
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a bowl, combine fava bean flour and water, mixing until a smooth dough forms. Let it rest for 10 minutes.
  2. Roll out the dough on a floured surface to a thickness of 2-3 mm, then cut into desired pasta shapes (e.g., fettuccine or tagliatelle).
  3. Bring a pot of salted water to a boil and cook the fava bean pasta for 3-4 minutes until al dente. Drain and set aside.
  4. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  5. Add halved cherry tomatoes to the skillet and cook for about 3-4 minutes until softened.
  6. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  7. Add the cooked fava bean pasta to the skillet, along with lemon juice, zest, salt, and black pepper. Toss everything together to combine.
  8. Remove from heat and sprinkle with crumbled feta cheese and chopped parsley before serving.
