  • Kalamata olives - 50 grams, pitted and sliced
  • Red onion - 1/4, thinly sliced
  • Bell pepper - 1/2, thinly sliced
  • Oregano - 1 teaspoon, dried
  • Mozzarella cheese - 100 grams, shredded
  • Fresh parsley - for garnish

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Slice the eggplant into 1 cm thick rounds and place them on a baking sheet.
