- Capers - 1 tablespoon, rinsed and chopped
- Feta cheese, crumbled (optional) - 50 grams
Steps
- Cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the diced red bell pepper and zucchini to the skillet, cooking for an additional 5 minutes until softened.
- Stir in the chopped parsley, dill, salt, and black pepper. Mix well for 1-2 minutes to release the herbs' flavors.
- Add the vegetable broth and lemon juice, bringing the mixture to a simmer. Allow to cook for 5 minutes.
- Fold in the cooked gluten-free pasta and capers, mixing until everything is well combined and heated through, about 2-3 minutes.
