- Canned diced tomatoes - 400 grams
- Beef or lamb broth - 500 ml
- Cinnamon stick - 1
- Bay leaf - 1
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Feta cheese, crumbled - 50 grams
- Fresh parsley, chopped - 2 tablespoons
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened and fragrant, about 5 minutes.
- Add the diced lamb to the pot, browning on all sides for about 8-10 minutes.
- Stir in the tomato paste, cooking for an additional 2 minutes to enhance the flavor.
- Add the canned tomatoes, broth, cinnamon stick, bay leaf, salt, and black pepper. Bring the mixture to a simmer.
- Cover the pot and let it cook gently for about 25 minutes, until the lamb is tender.
- Remove the cinnamon stick and bay leaf, then stir in the orzo pasta. Cover and cook for another 10-12 minutes, stirring occasionally, until the orzo is cooked al dente.
- Once cooked, remove from heat and let it sit for 5 minutes. Serve topped with crumbled feta cheese and chopped parsley.
