  • Orzo pasta - 150 grams
  • Olive oil - 2 tablespoons

  • Garlic, minced - 2 cloves
  • Tomato paste - 2 tablespoons
  • Canned diced tomatoes - 400 grams
  • Beef or lamb broth - 500 ml
  • Cinnamon stick - 1
  • Bay leaf - 1
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Feta cheese, crumbled - 50 grams
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened and fragrant, about 5 minutes.
  2. Add the diced lamb to the pot, browning on all sides for about 8-10 minutes.
  3. Stir in the tomato paste, cooking for an additional 2 minutes to enhance the flavor.
  4. Add the canned tomatoes, broth, cinnamon stick, bay leaf, salt, and black pepper. Bring the mixture to a simmer.
  5. Cover the pot and let it cook gently for about 25 minutes, until the lamb is tender.
  6. Remove the cinnamon stick and bay leaf, then stir in the orzo pasta. Cover and cook for another 10-12 minutes, stirring occasionally, until the orzo is cooked al dente.
  7. Once cooked, remove from heat and let it sit for 5 minutes. Serve topped with crumbled feta cheese and chopped parsley.
