- Chicken breast - 300 grams, diced
- Orzo pasta - 150 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Tomato puree - 400 grams
- Chicken broth - 500 ml
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Feta cheese - 50 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
Steps
- Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and diced chicken breast. Cook until the chicken is browned on all sides, about 5-7 minutes.
- Add the tomato puree, chicken broth, dried oregano, salt, and black pepper to the pot. Bring to a boil.
- Once boiling, reduce the heat to low and add the orzo pasta. Stir well to combine.
- Cover the pot and simmer for about 15-20 minutes, or until the orzo is cooked and the liquid is mostly absorbed, stirring occasionally.
- Remove from heat and let it sit for 5 minutes, covered.
- Serve warm, topped with crumbled feta cheese and chopped parsley.
