Ingredients

  • Chicken breast - 300 grams, diced
  • Orzo pasta - 150 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Tomato puree - 400 grams
  • Chicken broth - 500 ml
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and diced chicken breast. Cook until the chicken is browned on all sides, about 5-7 minutes.
  3. Add the tomato puree, chicken broth, dried oregano, salt, and black pepper to the pot. Bring to a boil.
  4. Once boiling, reduce the heat to low and add the orzo pasta. Stir well to combine.
  5. Cover the pot and simmer for about 15-20 minutes, or until the orzo is cooked and the liquid is mostly absorbed, stirring occasionally.
  6. Remove from heat and let it sit for 5 minutes, covered.
  7. Serve warm, topped with crumbled feta cheese and chopped parsley.
