- Giant white beans (dried) - 100 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato puree - 200 grams
- Vegetable broth - 200 ml
- Fresh parsley - 2 tablespoons, chopped
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Feta cheese (optional) - 30 grams, crumbled
Steps
- Soak the giant beans in water overnight, then drain and rinse them.
- In a pot, cover the soaked beans with fresh water and bring to a boil. Reduce heat and simmer for about 45 minutes or until tender. Drain and set aside.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the tomato puree, vegetable broth, parsley, oregano, salt, and black pepper. Bring the mixture to a simmer.
- Add the cooked beans to the skillet and stir to combine. Simmer for about 15 minutes to allow the flavors to meld.
