Ingredients

  • Giant white beans (dried) - 100 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato puree - 200 grams
  • Vegetable broth - 200 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese (optional) - 30 grams, crumbled

Steps

  1. Soak the giant beans in water overnight, then drain and rinse them.
  2. In a pot, cover the soaked beans with fresh water and bring to a boil. Reduce heat and simmer for about 45 minutes or until tender. Drain and set aside.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Add the minced garlic and cook for an additional minute until fragrant.
  5. Stir in the tomato puree, vegetable broth, parsley, oregano, salt, and black pepper. Bring the mixture to a simmer.
  6. Add the cooked beans to the skillet and stir to combine. Simmer for about 15 minutes to allow the flavors to meld.
