Ingredients

  • Shrimp (peeled and deveined) - 300 grams
  • Olive oil - 3 tablespoons
  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 3 cloves
  • Red bell pepper (chopped) - 1 medium
  • Tomato puree - 200 grams
  • Fresh parsley (chopped) - 2 tablespoons
  • Oregano (dried) - 1 teaspoon
  • Chili flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon (juiced) - 1 medium

Steps

  1. Heat the olive oil in a medium skillet over medium heat.
  2. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and chopped red bell pepper, cooking for another 2-3 minutes until softened.
  4. Add the tomato puree, dried oregano, chili flakes, salt, and black pepper. Stir well and let it simmer for 5 minutes.
  5. Add the shrimp to the skillet and cook for about 5-7 minutes, or until the shrimp are pink and cooked through.
  6. Remove from heat and stir in the chopped parsley and lemon juice.
  7. Serve hot, garnished with additional parsley and a wedge of lemon on the side.
