Ingredients

  • Zucchini - 2 medium (about 400g)
  • Almond flour - 50g
  • Parmesan cheese - 30g, grated
  • Eggs - 1 large
  • Dried oregano - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - for frying

Steps

  1. Wash and slice the zucchini into 1/2 cm thick rounds.
  2. In a bowl, mix almond flour, grated Parmesan cheese, dried oregano, garlic powder, salt, and black pepper.
  3. In another bowl, beat the egg until well combined.
  4. Heat a skillet over medium heat and add enough olive oil to cover the bottom of the pan.
  5. Dip each zucchini slice into the beaten egg, allowing excess to drip off, then coat it in the almond flour mixture, pressing lightly to adhere.
  6. Carefully place the coated zucchini slices in the hot oil and fry for about 2-3 minutes on each side or until golden brown and crispy.
  7. Remove the fried zucchini slices from the skillet and place them on a paper towel-lined plate to drain excess oil.
  8. Serve warm, optionally with a side of tzatziki or lemon wedges.
