Ingredients
- Zucchini - 2 medium (about 400g)
- Almond flour - 50g
- Parmesan cheese - 30g, grated
- Eggs - 1 large
- Dried oregano - 1 teaspoon
- Garlic powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - for frying
Steps
- Wash and slice the zucchini into 1/2 cm thick rounds.
- In a bowl, mix almond flour, grated Parmesan cheese, dried oregano, garlic powder, salt, and black pepper.
- In another bowl, beat the egg until well combined.
- Heat a skillet over medium heat and add enough olive oil to cover the bottom of the pan.
- Dip each zucchini slice into the beaten egg, allowing excess to drip off, then coat it in the almond flour mixture, pressing lightly to adhere.
- Carefully place the coated zucchini slices in the hot oil and fry for about 2-3 minutes on each side or until golden brown and crispy.
- Remove the fried zucchini slices from the skillet and place them on a paper towel-lined plate to drain excess oil.
- Serve warm, optionally with a side of tzatziki or lemon wedges.
