Ingredients

  • Zucchini - 300 grams
  • Almond flour - 50 grams
  • Eggs - 2 large
  • Feta cheese - 100 grams, crumbled
  • Fresh dill - 2 tablespoons, chopped
  • Garlic powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 100 ml for frying
  • Greek yogurt - 100 grams, for dipping
  • Lemon juice - 1 tablespoon

Steps

  1. Grate the zucchini using a box grater and place it in a clean kitchen towel to squeeze out excess moisture.
  2. In a mixing bowl, combine the grated zucchini, almond flour, eggs, crumbled feta cheese, chopped dill, garlic powder, salt, and black pepper. Mix until well combined.
  3. Heat the olive oil in a frying pan over medium heat.
  4. Scoop about 2 tablespoons of the zucchini mixture and form it into a patty. Carefully place the patty in the hot oil.
  5. Fry the fritters for about 3-4 minutes on each side or until golden brown and crispy.
  6. Remove the fritters from the pan and place them on a plate lined with paper towels to drain excess oil.
  7. In a small bowl, mix the Greek yogurt with lemon juice and a pinch of salt to create a dipping sauce.
  8. Serve the fried zucchini fritters warm with the yogurt dip on the side.
