- Zucchini - 300 grams
- Almond flour - 50 grams
- Eggs - 2 large
- Feta cheese - 100 grams, crumbled
- Fresh dill - 2 tablespoons, chopped
- Garlic powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 100 ml for frying
- Greek yogurt - 100 grams, for dipping
- Lemon juice - 1 tablespoon
Steps
- Grate the zucchini using a box grater and place it in a clean kitchen towel to squeeze out excess moisture.
- In a mixing bowl, combine the grated zucchini, almond flour, eggs, crumbled feta cheese, chopped dill, garlic powder, salt, and black pepper. Mix until well combined.
- Heat the olive oil in a frying pan over medium heat.
- Scoop about 2 tablespoons of the zucchini mixture and form it into a patty. Carefully place the patty in the hot oil.
- Fry the fritters for about 3-4 minutes on each side or until golden brown and crispy.
- Remove the fritters from the pan and place them on a plate lined with paper towels to drain excess oil.
- In a small bowl, mix the Greek yogurt with lemon juice and a pinch of salt to create a dipping sauce.
