Ingredients

  • Zucchini - 2 medium-sized (about 300g)
  • Almond flour - 100g
  • Grated Parmesan cheese - 50g
  • Garlic powder - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Egg - 1 large
  • Olive oil - for frying

Steps

  1. Wash and slice the zucchini into thin rounds, about 0.5 cm thick.
  2. In a bowl, mix together the almond flour, grated Parmesan cheese, garlic powder, dried oregano, salt, and black pepper.
  3. In another bowl, beat the egg until well mixed.
  4. Dip each zucchini slice into the egg, allowing excess to drip off, then coat it in the almond flour mixture, pressing gently to adhere.
  5. Heat olive oil in a frying pan over medium heat, enough to cover the bottom of the pan.
  6. Fry the zucchini chips in batches for 2-3 minutes on each side, or until golden brown and crispy.
  7. Remove from the pan and drain on paper towels to absorb excess oil.
  8. Serve warm, ideally with a side of tzatziki sauce for dipping.
