Ingredients
- Zucchini - 2 medium-sized (about 300g)
- Almond flour - 100g
- Grated Parmesan cheese - 50g
- Garlic powder - 1 teaspoon
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Egg - 1 large
- Olive oil - for frying
Steps
- Wash and slice the zucchini into thin rounds, about 0.5 cm thick.
- In a bowl, mix together the almond flour, grated Parmesan cheese, garlic powder, dried oregano, salt, and black pepper.
- In another bowl, beat the egg until well mixed.
- Dip each zucchini slice into the egg, allowing excess to drip off, then coat it in the almond flour mixture, pressing gently to adhere.
- Heat olive oil in a frying pan over medium heat, enough to cover the bottom of the pan.
- Fry the zucchini chips in batches for 2-3 minutes on each side, or until golden brown and crispy.
- Remove from the pan and drain on paper towels to absorb excess oil.
- Serve warm, ideally with a side of tzatziki sauce for dipping.
