- Cornstarch - 50g
- Baking powder - 1 teaspoon

- Milk - 100ml
- Olive oil - for frying
- Feta cheese - 50g, crumbled
- Fresh dill - 1 tablespoon, chopped
- Lemon wedges - for serving
Steps
- Wash the zucchini and cut them into thin slices, about 0.5 cm thick.
- In a mixing bowl, combine the flour, cornstarch, baking powder, salt, and black pepper.
- In another bowl, beat the egg and mix in the milk until well combined.
- Gradually add the wet ingredients to the dry ingredients, whisking until a smooth batter forms.
- Heat olive oil in a frying pan over medium heat, enough to cover the bottom of the pan (about 0.5 cm deep).
- Dip each zucchini slice into the batter, ensuring it is well coated, and carefully place it in the hot oil.
- Fry the zucchini slices in batches for about 3-4 minutes on each side or until golden brown and crispy.
- Remove the fried zucchini and place them on a plate lined with paper towels to drain excess oil.
- Sprinkle the fried zucchini with crumbled feta cheese and fresh dill before serving.
- Serve hot with lemon wedges on the side.
