- Red bell pepper - 1 medium, diced
- Zucchini - 1 small, diced
- Spinach - 50 grams, roughly chopped
- Egg - 1 large
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and sauté for about 30 seconds until fragrant.
- Stir in the diced red bell pepper and zucchini, cooking for 5-7 minutes until softened.
- Add the cooked rice to the skillet, breaking up any clumps and mixing with the vegetables.
- Push the rice mixture to one side of the skillet and crack the egg into the empty space, scrambling it until fully cooked.
