  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 small, diced
  • Spinach - 50 grams, roughly chopped
  • Egg - 1 large
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Stir in the diced red bell pepper and zucchini, cooking for 5-7 minutes until softened.
  4. Add the cooked rice to the skillet, breaking up any clumps and mixing with the vegetables.
  5. Push the rice mixture to one side of the skillet and crack the egg into the empty space, scrambling it until fully cooked.
  6. Mix the scrambled egg into the rice and vegetable mixture.
  7. Add the chopped spinach, crumbled feta cheese, dried oregano, salt, and black pepper, stirring until the spinach wilts and everything is heated through.
  8. Remove from heat and garnish with fresh parsley before serving.
