Ingredients
- Basmati rice - 200 grams (1 cup)
- Water - 400 ml (1.7 cups)
- Olive oil - 2 tablespoons
- Onion, finely chopped - 1 small (about 100 grams)
- Garlic, minced - 2 cloves
- Bell pepper, diced - 1 medium (about 150 grams)
- Frozen peas - 50 grams (1/3 cup)
- Eggs - 2 large
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Dried oregano - 1/2 teaspoon
- Fresh parsley, chopped (for garnish) - 2 tablespoons
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium pot, bring 400 ml of water to a boil. Drain the soaked rice and add it to the boiling water with 1/2 teaspoon of salt. Cover and simmer on low heat for 15 minutes, or until the rice is cooked and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.
- While the rice is resting, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic and diced bell pepper to the skillet, cooking for an additional 3 minutes until the peppers are tender.
- Push the vegetables to one side of the skillet, crack the eggs into the empty space, and scramble them for about 2 minutes until just set.
- Stir the cooked rice into the skillet, mixing well with the vegetables and eggs. Add the frozen peas, black pepper, dried oregano, and the remaining 1/2 teaspoon of salt. Stir-fry everything together for another 3-4 minutes until heated through.
- Remove from heat and garnish with chopped parsley before serving.
