- Cooked rice - 200 grams
- Chickpea flour - 50 grams
- Fresh parsley - 30 grams, chopped
- Fresh dill - 15 grams, chopped
- Green onion - 2 stalks, finely chopped
- Garlic - 2 cloves, minced
- Lemon zest - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - for frying
- Breadcrumbs - 100 grams
Steps
- In a large bowl, combine the cooked rice, chickpea flour, parsley, dill, green onion, minced garlic, lemon zest, salt, and black pepper. Mix well until all ingredients are evenly combined.
- Using your hands, form the mixture into small balls, about the size of a golf ball.
- Place the breadcrumbs in a shallow dish. Roll each rice ball in the breadcrumbs until well-coated.
- In a large frying pan, heat olive oil over medium heat. Once hot, add the rice balls in batches, being careful not to overcrowd the pan.
- Fry the rice balls for about 4-5 minutes on each side or until they are golden brown and crispy.
- Remove the fried rice balls from the pan and place them on a paper towel-lined plate to absorb any excess oil.
- Serve warm, garnished with additional fresh herbs or a dipping sauce if desired.
