Ingredients

  • Cooked rice - 200 grams
  • Chickpea flour - 50 grams
  • Fresh parsley - 30 grams, chopped
  • Fresh dill - 15 grams, chopped
  • Green onion - 2 stalks, finely chopped
  • Garlic - 2 cloves, minced
  • Lemon zest - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - for frying
  • Breadcrumbs - 100 grams

Steps

  1. In a large bowl, combine the cooked rice, chickpea flour, parsley, dill, green onion, minced garlic, lemon zest, salt, and black pepper. Mix well until all ingredients are evenly combined.
  2. Using your hands, form the mixture into small balls, about the size of a golf ball.
  3. Place the breadcrumbs in a shallow dish. Roll each rice ball in the breadcrumbs until well-coated.
  4. In a large frying pan, heat olive oil over medium heat. Once hot, add the rice balls in batches, being careful not to overcrowd the pan.
  5. Fry the rice balls for about 4-5 minutes on each side or until they are golden brown and crispy.
  6. Remove the fried rice balls from the pan and place them on a paper towel-lined plate to absorb any excess oil.
  7. Serve warm, garnished with additional fresh herbs or a dipping sauce if desired.
