- White fish fillets (such as cod or haddock) - 250g
- Rice flour - 100g
- Salt - 1/2 tsp
- Black pepper - 1/4 tsp
- Paprika - 1/2 tsp
- Egg - 1, beaten
- Olive oil - 100ml (for frying)
- Greek yogurt - 150g
- Cucumber - 1 small, grated
- Garlic - 1 clove, minced
- Lemon juice - 1 tbsp
- Fresh dill - 1 tbsp, chopped
- Salt - to taste
Steps
- In a mixing bowl, combine the grated cucumber with a pinch of salt and let it sit for 10 minutes to release excess water.
- In another bowl, mix the Greek yogurt, minced garlic, lemon juice, chopped dill, and season with salt to taste. Set this tzatziki sauce aside.
- Pat the fish fillets dry with a paper towel and season both sides with salt, black pepper, and paprika.
- Dredge each fish fillet in rice flour, shaking off any excess, then dip into the beaten egg, allowing the excess to drip off.
- Heat the olive oil in a large frying pan over medium heat. Once hot, add the coated fish fillets and fry for about 3-4 minutes on each side, or until golden and cooked through.
- Remove the fish from the pan and place on paper towels to drain excess oil.
- Serve the fried fish hot with a generous side of tzatziki sauce.
