Ingredients

  • Eggplant - 1 medium (about 250g)
  • Salt - 1 teaspoon
  • Rice flour - 1/2 cup (60g)
  • Olive oil - 1/2 cup (120ml) for frying
  • Honey - 2 tablespoons (30ml)
  • Black pepper - 1/4 teaspoon
  • Fresh mint leaves - for garnish (optional)

Steps

  1. Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let them sit for about 15 minutes to draw out moisture and bitterness.
  2. Rinse the eggplant slices under cold water and pat them dry with paper towels.
  3. In a shallow dish, place the rice flour and season with black pepper. Dredge each eggplant slice in the flour, coating both sides evenly.
  4. In a large skillet, heat the olive oil over medium heat. Once hot, add the eggplant slices in batches, making sure not to overcrowd the pan.
  5. Fry the eggplant for about 3-4 minutes on each side or until they are golden brown and crispy.
  6. Remove the fried eggplant and place them on a paper towel-lined plate to absorb excess oil.
  7. Drizzle the fried eggplant with honey while still warm, and garnish with fresh mint leaves if desired.
  8. Serve immediately and enjoy your delicious Greek breakfast!
