Ingredients
- Eggplant - 1 medium (about 250g)
- Salt - 1 teaspoon
- Rice flour - 1/2 cup (60g)
- Olive oil - 1/2 cup (120ml) for frying
- Honey - 2 tablespoons (30ml)
- Black pepper - 1/4 teaspoon
- Fresh mint leaves - for garnish (optional)
Steps
- Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let them sit for about 15 minutes to draw out moisture and bitterness.
- Rinse the eggplant slices under cold water and pat them dry with paper towels.
- In a shallow dish, place the rice flour and season with black pepper. Dredge each eggplant slice in the flour, coating both sides evenly.
- In a large skillet, heat the olive oil over medium heat. Once hot, add the eggplant slices in batches, making sure not to overcrowd the pan.
- Fry the eggplant for about 3-4 minutes on each side or until they are golden brown and crispy.
- Remove the fried eggplant and place them on a paper towel-lined plate to absorb excess oil.
- Drizzle the fried eggplant with honey while still warm, and garnish with fresh mint leaves if desired.
- Serve immediately and enjoy your delicious Greek breakfast!
