  • Lemon - 1, juiced
  • Black pepper - to taste

Steps

  1. Slice the eggplant into 1 cm thick rounds and sprinkle both sides with salt. Let them sit for 15 minutes to draw out excess moisture and bitterness.
  2. Rinse the eggplant slices under cold water and pat them dry with a paper towel.
  3. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once hot, add the eggplant slices in a single layer (you may need to do this in batches). Fry for about 3-4 minutes on each side until golden brown and tender. Add more oil as needed for subsequent batches.
