Ingredients

  • Eggplant - 1 large
  • Feta cheese - 100 grams, crumbled
  • Greek yogurt - 100 grams
  • Fresh parsley - 2 tablespoons, chopped
  • Garlic - 1 clove, minced
  • Olive oil - 50 ml (for frying)
  • Salt - to taste
  • Black pepper - to taste
  • Egg (for egg wash) - 1 large
  • All-purpose flour - 50 grams (for coating)
  • Breadcrumbs - 50 grams (for coating)

Steps

  1. Slice the eggplant into thin strips, about 0.5 cm thick, and sprinkle with salt. Let sit for 20 minutes to draw out moisture and bitterness, then rinse and pat dry.
  2. In a bowl, mix together the crumbled feta, Greek yogurt, chopped parsley, minced garlic, salt, and pepper until well combined.
  3. Take a slice of eggplant, place a spoonful of the feta mixture at one end, and roll it up tightly. Secure with a toothpick if necessary. Repeat with remaining eggplant slices and filling.
  4. Set up a breading station with three shallow dishes: one with flour, one with beaten egg, and one with breadcrumbs.
  5. Dip each eggplant roll first into the flour, then the egg, and finally coat with breadcrumbs.
  6. In a large skillet, heat olive oil over medium heat. Carefully add the eggplant rolls, making sure not to overcrowd the pan. Fry until golden brown on all sides, about 3-4 minutes per side.
  7. Once cooked, remove from the skillet and place on a paper towel-lined plate to soak up excess oil.
