- Garlic powder - 1 tsp (3g)

- Salt - 1 tsp (6g)
- Black pepper - 1/2 tsp (1g)
- Water - 3/4 cup (180ml)
- Olive oil - for frying (about 500ml)
- Lemon juice - 2 tbsp (30ml)
- Tahini - 2 tbsp (30g)
- Fresh parsley - for garnish
Steps
- Wash and cut the cauliflower into bite-sized florets.
- In a large bowl, mix together the all-purpose flour, cornstarch, baking powder, garlic powder, paprika, salt, and black pepper.
- Gradually add the water to the dry ingredients, whisking until you have a smooth batter.
- Heat olive oil in a deep pan over medium heat, enough to submerge the cauliflower florets.
- Dip each cauliflower floret into the batter, ensuring it is well-coated, and carefully place them into the hot oil.
- Fry the florets in batches for about 4-5 minutes or until they are golden brown and crispy, turning occasionally.
- Remove the fried cauliflower with a slotted spoon and place on a plate lined with paper towels to absorb excess oil.
- In a small bowl, mix tahini with lemon juice and a little water to thin it out, creating a sauce.
- Serve the fried cauliflower hot, drizzled with tahini sauce and garnished with fresh parsley.
